Sweet Potato Pie - cooking recipe

Ingredients
    2 c. cooked, mashed sweet potato
    1 c. firmly packed brown sugar
    1/2 c. margarine, softened
    2 eggs, separated
    1/2 tsp. each ginger, cinnamon, nutmeg
    1/4 tsp. salt
    1/2 c. evaporated milk
    1/4 c. sugar
Preparation
    Combine sweet potato,
    brown
    sugar, butter, egg yolks, spices and salt in a large
    mixing bowl.
    Beat until light and fluffy. Add evaporated milk,
    mix
    until just combined.
    Beat egg whites until foamy.
    Gradually
    add
    sugar, beating stiff. Fold into potato mixture.
    Pour
    into
    pastry
    shell.
    Bake at 400\u00b0 for ten minutes, reduce heat
    to 350\u00b0 and bake 45 minutes or until set. Cool.
    Top with whipped topping if desired.
