5 lb. crown pork roast
vegetable oil
salt and pepper
1/4 c. butter or margarine
3 green onions (and tops), sliced
4 large fresh mushrooms, sliced
2 tart apples, diced
3 c. stuffing mix
1/2 c. applesauce
3 Tbsp. apple brandy
1 (10 oz.) jar apricot preserves
1/2 c. apple brandy

Preparation

Two rack ribs can be substituted for the crown roast. Tie each rack in a circle.
Place bone tips up on rack in open shallow roasting pan, packing stuffing in center.
