Italian Omelet Peasant Style - cooking recipe
Ingredients

1/4 lb. Italian hot or sweet sausage
2 Tbsp. olive oil
6 eggs
Preparation

Cut sausage into 1-inch pieces and brown in oil over medium heat for 10 minutes, stirring frequently.
Beat eggs until light and fluffy.
Reduce heat.
Pour eggs on sausage and cook until eggs are thick and creamy.
Serve very hot.
Serves 4.
