Gourmet Vegetable Cheese Soup - cooking recipe

1 1/2 qt. water
3 carrots, peeled and sliced*
2 Tbsp. parsley flakes
pepper to taste
2 cans cream of chicken soup
3 potatoes, peeled and chopped
1 small onion, chopped or minced
3 chicken bouillon cubes
1 (20 oz.) bag frozen mixed veggies
1 lb. Velveeta cheese
