Rice Salad - cooking recipe

Ingredients
    1 c. long grain rice
    1/4 lb. Cheddar cheese, grated coarsely
    1 (4 oz.) can green chiles, drained
    1/4 c. chopped pimiento
    3/4 c. thinly sliced scallions (include green tops)
    3/4 c. mayonnaise
Preparation
    Cook rice according to package directions; cool and turn into a large bowl.
    Fold in mayonnaise, cheese, chiles, pimiento and scallions.
    Serve at room temperature.
    Makes 4 to 6 servings.
