Tomatoes Vinaigrette - cooking recipe

Ingredients
    2 medium sliced tomatoes
    1/2 c. olive or vegetable oil
    3 Tbsp. wine vinegar
    1 tsp. dried oregano leaves
    1/2 tsp. salt
    1/4 tsp. pepper
    1/4 tsp. dry mustard
    1 clove garlic
    lettuce leaves
    4 green onions, finely chopped
    1 Tbsp. snipped parsley
Preparation
    Arrange tomatoes in 8 x 8 x 2-inch square glass dish.
    Shake oil, vinegar, oregano, salt, pepper, mustard and garlic in a tightly covered jar.
    Pour over tomatoes.
    Cover and refrigerate, spooning dressing over tomatoes occasionally, at least 2 hours. Arrange on lettuce leaves.
    Sprinkle with onion and parsley. Drizzle with dressing.
    Makes 4 servings.
