Carrot Cake - cooking recipe
Ingredients

1 tsp. ground cinnamon
1 tsp. ground mace
1/2 tsp. salt
1 c. or 2 sticks margarine
2 c. sugar
4 eggs
1 1/2 c. finely grated carrots
2/3 c. pecans
2 1/2 c. sifted flour
3 tsp. baking powder
1/3 c. hot water
1/2 c. sugar
1/2 c. undiluted milk
2 egg yolks
1/4 c. butter
1 tsp. vanilla
1/2 c. coconut
1/2 c. pecans
1/2 c. dates
Preparation

Combine first 4 ingredients in a saucepan.
Mix well.
Stir and cook over medium heat until thickened (12 minutes); remove. Stir in rest of ingredients.
Beat until spreading consistency. Frost with seven minute frosting or caramel frosting.
This freezes well.
