Curried Tomato-Apple Chicken(Low-Fat) - cooking recipe
Ingredients

4 half chicken breasts, skinned and boneless
1 can (14 1/2 oz.) stewed tomatoes
1/2 c. white raisins
2 to 3 tsp. curry powder
1/2 c. sliced green onion, 1 inch pieces
1 green apple, thinly sliced
hot cooked couscous, bulgur or rice
Preparation

Cut chicken into 1-inch pieces.
In large skillet or wok, combine chicken, tomatoes, raisins and curry.
Cook over medium heat, stirring frequently, 10 minutes or until chicken is tender. Stir in onions and apple.
Bring to boil; reduce heat.
Simmer, uncovered, 10 minutes or until sauce thickens.
Serve over couscous, bulgur or rice.
