Cornbread Salad - cooking recipe

Ingredients
    1 box Jiffy cornbread mix, prepared by directions
    4 tomatoes, chopped
    1 bell pepper, chopped
    1 Vidalia onion, chopped
    1/2 c. pickle relish or chopped sweet pickles
    9 slices bacon
    1 c. mayonnaise and 1/2 c. pickle juice, mixed
Preparation
    Mix vegetables and relish.
    In a pretty glass bowl, layer cornbread, vegetables and dressing; second layer as first.
    Cover and refrigerate for 3 hours.
    Crumble bacon on top and serve. Good for a salad to serve with fish or anytime.
    Unusual but good.
