Collard Green Soup - cooking recipe
Ingredients

1 lb. smoked sausage, cut into pieces
1 qt. water
2 lb. collards, cleaned and shredded
1 (16 to 17 oz.) can Great Northern beans, drained
1 small onion, chopped
1 small green pepper, chopped
1 medium potato, chopped
salt and pepper to taste
Preparation

Simmer sausage in water for 45 minutes.
Add shredded collards and drained beans to meat and cook 30 minutes.
Add onion, green pepper and potatoes.
Season and cook until potatoes are tender. Add more liquid if desired, such as ham or chicken broth.
