Watermelon Spice - cooking recipe

Ingredients
    watermelon rind
    1 qt. good vinegar
    4 lb. granulated sugar
    cinnamon bark
    whole cloves
    mace
    2 or 3 lemons
Preparation
    An old chicken is best for soup.
    Cut up, add half pound lean ham and four quarts cold water; bring slowly to boil.
    Boil gently until chicken drops from bone.
    Skim out chicken.
    Add half cup rice.
    Cook slowly until rice is tender. Cut white meat of chicken into small pieces and add to broth.
    Stir in 2 cups rich milk thickened with a little flour.
    Season with salt, pepper and butter.
