Rice O'Bryan - cooking recipe

Ingredients
    1 bell pepper, chopped fine
    2 bunches shallots, chopped fine
    1 stick margarine
    1 large can pitted black olives, drained and chopped
    3 c. cooked rice
    1 lb. crawfish tails (optional)
    1/2 lb. ham seasoning, chopped fine
Preparation
    Saute pepper and shallots in margarine.
    If using crawfish and ham, add now and saute with seasoning.
    Add olives and stir in rice.
    Simmer until heated thoroughly.
    Serves 6.
