Parmesan Catfish - cooking recipe
Ingredients

1/2 c. grated Parmesan cheese
2 Tbsp. yellow cornmeal
1 tsp. paprika
1/8 tsp. ground red pepper
8 (4 oz.) farm raised catfish fillets
vegetable cooking spray
Preparation

Combine the first 4 ingredients in a large zip-top plastic bag.
Add fillets; seal bag and shake to coat fillets with cheese mixture.
Place on broiler pan coated with cooking spray; discard remaining cheese mixture.
Broil 3 inches from heat (with electric oven door partially opened) for 10 minutes, or until fish flakes easily when tested with a fork.
Makes 8 servings.
