Sweet Potato Souffle - cooking recipe
Ingredients

3 c. mashed cooked sweet potatoes (about 2 large, peeled)
1/4 c. brown sugar
3 Tbsp. butter
4 eggs, beaten
1/4 c. rum
1/4 tsp. cinnamon
Preparation

Preheat oven to 350\u00b0.
Combine mashed sweet potatoes with the rest of the ingredients.
Beat well by hand or with mixer.
Fold into buttered 2-quart baking dish.
Bake for 45 to 50 minutes or until knife inserted in center comes out clean and top is firm and golden.
Serves 6.
