Best Beef Barbecue - cooking recipe

Ingredients
    3 lbs. boneless chuck roast
    1 c. barbecue sauce
    1/2 c. apricot preserves
    1/2 c. chopped red bell pepper
    1 small onion
    1 Tbsp. Dijon mustard
    2 tsp. brown sugar
Preparation
    Cut roast in quarters.
    Place in greased 5 qt. crock pot. Combine all ingredients and mix thoroughly.
    Pour over roast. Cover and cook on low for 6 to 8 hours.
    Slice apart meat; cook for 30 minutes longer.
    Serve on rolls.
