Ingredients

2 Tbsp. softened butter
1 1/2 c. sugar
1 1/3 c. flour
1/4 tsp. salt
1/2 c. lemon juice
1 tsp. grated lemon rind
3 eggs
1 1/4 c. milk
Preparation

Mix first 6 ingredients.
Stir in beaten egg yolks of 3 eggs. Mix in milk; fold in stiffly beaten whites.
Pour into custard cups or single dish.
Set in pan of water.
Bake for 45 minutes at 375\u00b0.
