Garden Fresh Potato Salad - cooking recipe

Ingredients
    1 1/2 lb. potatoes
    2 Tbsp. vegetable oil
    1 Tbsp. chopped onion
    1 Tbsp. fresh lemon juice
    1 tsp. salt
    1/4 tsp. pepper
    1 c. chopped green pepper
    1 c. diced cooked ham
    8 hard-boiled eggs, diced
    1/2 c. mayonnaise
    lettuce
Preparation
    Cook potatoes in boiling water, covered, until tender; peel and slice.
    Add oil, onion, lemon juice, salt and pepper; mix well.
    Let stand 1 to 2 hours.
    Add celery, green pepper, ham, eggs and mayonnaise; mix lightly.
    Spoon into a salad bowl lined with lettuce.
    Makes 8 servings.
