Chicken And Rice - cooking recipe
Ingredients

1 1/3 c. rice
1 1/2 c. chopped green peppers (bell)
3/4 c. sliced onions
3 Tbsp. oil
1/4 c. cornstarch
2 c. chicken stock
3 Tbsp. soy sauce
2 c. slivered chicken
3 ripe tomatoes, cut in thin wedges
Preparation

Prepare rice and keep warm.
Meanwhile, cook green peppers and onions in heated oil in covered pan over low heat until tender, but not browned.
Blend cornstarch with small amount of chicken stock and add remaining stock with soy sauce.
Gently stir chicken into vegetables; cook and stir until sauce is clear and thickened.
Add tomatoes.
Serve over rice.
