Chicken A La Creole - cooking recipe

Ingredients
    1 whole chicken
    2 Tbsp. oil
    1 large onion
    2 garlic buds
    1 c. bell pepper
    1 Tbsp. parsley
    1 c. green onions
    1 tsp. mint or bay leaf
    2 c. stock
    2 lb. tomatoes
    2 Tbsp. soy sauce
    2 tsp. hot sauce
    1 c. water
Preparation
    Boil chicken.
    Skin, bone and reserve the stock (skim off fat).
    Saute onion, garlic buds, bell pepper, parsley and green onion in oil.
    Add other ingredients and chicken meat.
    Simmer for thirty minutes or more.
    Serve over rice.
