Enid'S Orange Bran Muffins - cooking recipe
Ingredients

1/2 c. whole bran cereal
1/2 c. orange juice
1 3/4 c. sifted all-purpose flour
2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1/4 c. honey
1/2 c. shortening
1 egg
1/4 c. milk
1/2 c. drained crushed pineapple
Preparation

Mix bran and orange juice together and set aside.
In another bowl, sift together flour, baking powder, baking soda and salt. In a large bowl, cream honey and shortening.
Add egg and beat until light and fluffy.
Add dry ingredients alternately with milk and bran/orange juice mixture.
Do not overmix.
Add crushed pineapple.
Spoon mixture into greased muffin tins and bake in preheated 400\u00b0 oven for 20 minutes.
