Roasted Red Pepper Sauce - cooking recipe

Ingredients
    12 oz. jar roasted red peppers, drained
    1 Tbsp. olive oil
    1 1/2 tsp. fresh lemon juice
    1 1/2 tsp. wine vinegar
    1 Tbsp. water
    1/2 tsp. minced garlic
    salt, pepper and cayenne pepper to taste
    2 Tbsp. chopped fresh parsley
    1 lb. linguine, cooked
    1 c. crumbled Blue cheese (I use Saga)
Preparation
    In a blender, combine red peppers, olive oil, lemon juice, vinegar, water, garlic, salt, pepper and cayenne.
    Blend for 1 minute, or until sauce is smooth.
    Add chopped parsley.
    Pour over hot linguine and toss to coat well.
    Serve topped with Blue cheese.
    Serves four.
