Ensalada Enchilada - cooking recipe

Ingredients
    8 large lettuce leaves
    1/2 c. carrots
    1/2 c. mushrooms
    1/3 c. radishes
    1/2 c. cucumbers
    1/2 c. green onions
    1 c. shredded low-fat cheese
Preparation
    Chop ingredients separately (not mushy).
    Toss ingredients and season to taste.
    Do not mix cheese in.
    Roll chopped ingredients into a lettuce leaf.
    Top with shredded cheese.
    Serves 4.
