Oatmeal Raisin Muffins - cooking recipe
Ingredients

1 1/4 c. rolled oats
1 1/4 c. buttermilk
2 large eggs, beaten lightly
3/4 c. firmly packed dark brown sugar
1 stick (1/2 c.) unsalted butter, melted and cooled
1 c. all-purpose flour
1 1/4 tsp. double-acting baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1/2 c. raisins
Preparation

In a large bowl, combine the oats and buttermilk.
Let the mixture stand for 1 hour.
Stir in the eggs, sugar and the butter. Sift the flour with the baking powder, salt and soda.
Add the flour mixture
to the egg mixture and stir the mixture until it is combined.
(The batter will be lumpy.)
Fold in the raisins. Spoon the batter into 12 well buttered and floured 1/3 cup muffin tins. Bake the muffins in a preheated oven at 400\u00b0 for 15 to 20 minutes or until a cake tester inserted in the centers comes out clean.
Makes 12 muffins.
