Carrot Casserole - cooking recipe

Ingredients
    2 lb. carrots, sliced and cooked until tender
    3 Tbsp. butter
    1 medium onion, diced
    1 can cream of celery soup
    1/8 tsp. black pepper
    1 c. grated Cheddar cheese
    1/2 tsp. salt
Preparation
    Saute onion in butter.
    Mix all ingredients and place in 9 x 13-inch greased casserole dish.
    Top with 1/3 cup butter and 1/2 stack pack Ritz crackers, crumbled.
    Bake at 350\u00b0 for 20 to 30 minutes.
    May be made ahead of time and frozen without topping and baked later.
    Very good.
