Old-Fashioned Bean Soup - cooking recipe

Ingredients
    1 lb. navy beans (dry)
    2 tsp. salt
    11 c. water
    1 1/2 lb. ham hocks (pieces)
    3/4 c. grated carrots
    3/4 c. chopped celery
    2/3 c. chopped onion
Preparation
    Rinse navy beans and pick out the bad ones.
    Place beans into the 11 cups of boiling water.
    Boil for 2 minutes; cover and let stand overnight.
    The next day, add salt and other ingredients. Gently boil beans in the same water in a covered pot for about 2 hours until tender.
    Add more water as needed.
    Remove fat, bone and skin from ham but leave the meat in.
    Season to taste and simmer 1/2 hour before serving.
