Pickled Eggs - cooking recipe

Ingredients
    2 c. white vinegar
    2 Tbsp. sugar
    1 medium onion, sliced and separated into rings
    1 tsp. salt
    1 tsp. whole mixed pickling spice
    12 hard-cooked eggs
Preparation
    In a medium saucepan, combine all ingredients except the eggs. Simmer over low heat, uncovered, until the onions are tender, about 10 minutes.
    Arrange the eggs in two 1-quart jars with tightly fitted lids.
    Pour 1 cup of vinegar mixture over the eggs in each jar.
    Cover and refrigerate several hours or overnight. Eggs may be stored in the refrigerator for up to 2 weeks.
