Tomato-Cheese Fillets(Microwave) - cooking recipe
Ingredients

1 Tbsp. margarine
2 Tbsp. finely chopped onion
1 lb. fish fillets (such as cod, flounder or trout)
1/4 tsp. salt
1/8 tsp. black pepper
1 large tomato, diced
3 Tbsp. grated Parmesan cheese
paprika (optional)
Preparation

Place margarine and onion in a 1-cup glass measure and cook on full power 1 1/2 minutes or until onion is soft. Arrange fish in a shallow baking dish with thicker edges of fish to outside of dish. Sprinkle salt and pepper over fish; cover with diced tomato pieces. Spread margarine and onions evenly over tomatoes. Cover with wax paper; cook 3 minutes on full power. Sprinkle with Parmesan cheese. Cover with waxed paper; cook 1 minute more or until fish flakes easily when tested with a fork. Sprinkle with paprika. Makes 4 servings.
