Possum And Potatoes - cooking recipe

Ingredients
    1 possum, skinned and gutted
    salt and pepper
    2 c. bread crumbs
    1 c. applesauce
    1/2 c. chestnuts
    3 medium sweet potatoes, cut up
    1/2 c. lemon juice
    water
    4 Tbsp. butter
Preparation
    Scrape, skin, clean and scald in boiling water the possum. Salt and pepper inside and out to taste.
    Make a mixture of the bread crumbs, applesauce and chestnuts; stuff the mixture inside the possum.
    Cover with sweet potatoes, 1 cup of water and lemon juice.
    Bake in butter and baste often.
    Bake until tender, about 2 hours.
