Potato-Stuffed Franks - cooking recipe

Ingredients
    mashed potato mix (enough for 4 servings)
    2 Tbsp. finely chopped onions
    2 Tbsp. snipped parsley
    1 tsp. prepared mustard
    1 lb. frankfurters (about 10)
    1/2 c. shredded Cheddar cheese (2 oz.)
Preparation
    Prepare potatoes as directed on package.
    Mix potatoes, onion, parsley and mustard.
    Split frankfurters lengthwise, not cutting completely through.
    Spread frankfurters open; place cut sides up on rack in broiler pan.
    Spread with potato mixture; sprinkle with cheese.
    Set oven control to broil and/or 500\u00b0.
    Broil frankfurters with tops about 5 inches from heat until cheese is melted, 5 to 8 minutes.
