Sour Cream Pralines - cooking recipe
Ingredients

1 1/2 c. sugar
1 1/2 c. packed brown sugar
1/4 tsp. salt
1/4 tsp. baking soda
1 c. sour cream
1 Tbsp. light corn syrup
2 Tbsp. butter or oleo
1 tsp. vanilla
2 c. pecans
Preparation

Combine sugars, baking soda, salt, sour cream and corn syrup in a heavy saucepan.
Cook over moderate heat to thread stage (230\u00b0 on candy thermometer), stirring constantly.
Remove from heat.
Beat in butter, vanilla and pecans.
Cool to warm, then beat until mixture begins to lose its sheen.
Working rapidly to prevent candy from setting, drop by teaspoonfuls onto waxed paper. If candy begins to set, return to heat or put pot in a bowl of boiling water until mixture is soft and smooth.
When set and cool, remove pralines to a tray.
Makes about 36.
