Zucchini Pizza - cooking recipe

Ingredients
    3 1/2 c. coarsely grated zucchini (about 1 1/4 lb.)
    2 large eggs, lightly beaten
    2 c. (8 oz.) shredded Mozzarella cheese, divided
    1/2 c. grated Parmesan cheese
    1/3 c. all-purpose flour
    1 Tbsp. olive oil
    1 c. commercial spaghetti sauce
    1 tsp. dried oregano
    1/8 tsp. dried crushed red pepper
Preparation
    Press zucchini between paper towels to remove excess moisture. Combine zucchini, eggs, 1 cup Mozzarella cheese, Parmesan cheese and flour in a medium bowl; stir well.
    Spread in a greased 13 x 9 x 2-inch pan.
    Bake uncovered at 350\u00b0 for 20 to 25 minutes. Remove from oven; brush surface with oil.
    Broil 5 1/2 inches from heat 5 minutes.
    Remove from oven; spread spaghetti sauce on top of zucchini mixture.
    Sprinkle with remaining 1 cup Mozzarella cheese, oregano and red pepper.
    Bake, uncovered, at 350\u00b0 an additional 20 minutes.
    Yield:
    6 servings.
