Southwestern Muffins - cooking recipe

Ingredients
    1/2 c. finely chopped sweet red pepper
    1/4 c. finely chopped onion
    3/4 c. diced cooked ham
    1 c. all-purpose flour
    1 tsp. salt
    2 eggs, beaten
    1/2 c. whipping cream
    1/4 c. butter or margarine, melted
    1/2 c. finely chopped sweet yellow pepper
    2 Tbsp. vegetable oil
    1 1/2 c. blue cornmeal or yellow cornmeal
    1 Tbsp. baking powder
    1/4 c. sugar
    1 c. milk
    1/4 c. vegetable oil
Preparation
    Saute peppers and onion in 2 tablespoons oil until tender; stir in ham.
    Combine cornmeal and next 4 ingredients in a large bowl.
    Make a well in center of mixture.
    Combine eggs and next 4 ingredients; add to dry ingredients with pepper mixture, stirring just until moistened.
    Spoon into greased muffin pans, filling 2/3 full.
    Bake at 425\u00b0 for 15 to 20 minutes or until golden.
    Remove from pans immediately.
    Yield: about 2 dozen.
