Tricolor Pasta With Vegetables - cooking recipe
Ingredients

8 oz. tricolor pasta
2 Tbsp. olive oil or vegetable oil
1/2 lb. mushrooms, quartered
1 small zucchini, cut into thin wedges
1 garlic clove, minced
3 medium tomatoes, coarsely chopped
1/2 tsp. salt
1/3 c. Parmesan cheese
Preparation

Cook pasta according to package directions; drain.
Meanwhile in large saucepan, heat oil over medium-high heat.
Add mushrooms, zucchini, onion and garlic.
Cook, stirring, until lightly browned and tender.
Stir in tomatoes, oregano and salt.
Cook until tomatoes are just soft.
Add pasta and Parmesan cheese to vegetable mixture in saucepan and toss well.
Serve immediately.
