Chicken And Sausage Gumbo - cooking recipe
Ingredients

1 small fryer
1 link pork sausage
1 onion, chopped
1/2 bell pepper, chopped
1 c. green onions, chopped
1/2 bell pepper, chopped
2 bay leaves (optional)
2 qt. water
3 Tbsp. oil
3 Tbsp. flour
Cooked rice
Preparation

Make a dark roux with oil and flour.
Boil chicken in 2 quarts water, and debone.
Boil some of the grease out of the sausage, drain and slice into small pieces.
In dark roux, saute onions, celery, and bell pepper.
Add water in which chicken was boiled.
Add bay leaves, salt, pepper, and other seasonings to taste.
Add chicken pieces and sausage.
Simmer about 1 hour. Remove bay leaves.
Serve in soup bowls over a large spoonful of rice.
If desired, sprinkle prepared gumbo file (1/2 tsp.) over top.
Do not cook file in pot.
