Ingredients

1 c. butter
1 c. sugar (white)
1 c. brown sugar
1 tsp. vanilla
1 egg
1/2 tsp. salt
1 tsp. baking soda
2 c. flour
1 c. instant potato flakes
1 c. coconut
Preparation

Cream together butter, sugars and vanilla.
Beat in egg, then add remaining ingredients.
Mix thoroughly.
Shape into 1 inch balls and put on ungreased cookie sheet.
Flatten with bottom of drinking glass which has been slightly moistened and dipped in sugar.
Bake at 375\u00b0 for 8 minutes or until just barely golden brown around edges for chewy cookies.
(Bake longer for crispier cookies.)
