Mashed Potatoes With Carrots And Onions - cooking recipe

Ingredients
    1 small onion, chopped
    1 tsp. butter or olive oil
    1 large potato, peeled and cut into about 8 sections
    1 large carrot, cleaned and cut into 6 to 8 sections
    1/2 c. nonfat sour cream or low-fat Ricotta cheese
Preparation
    Saute onion in the butter (or oil) until brown.
    Cook potato and carrot in boiling water until tender.
