Crisp Fried Shrimp - cooking recipe

Ingredients
    1 lb. medium size shrimp
    2 eggs
    1/2 c. light cream or half and half
    1/2 tsp. salt
    1 c. bread crumbs
    vegetable oil for frying
Preparation
    Shell and devein shrimp, leaving tails intact.
    In small bowl, beat eggs, cream and salt until well blended.
    Pour into shallow dish or pie plate.
    Measure bread crumbs onto wax paper.
    Dip shrimp into egg mixture, then bread crumbs, coating well. Refrigerate in single layer on cookie sheet for 1 hour.
    Pour oil into a medium size saucepan to a 2-inch depth.
    Heat to 350\u00b0.
    Fry shrimp, a few at a time, about 2 minutes or until golden brown. Remove with slotted spoon to a paper towel to drain.
    Keep in 250\u00b0 oven until all the shrimp are cooked.
