Breaded Veal Cutlets Sicilian Style - cooking recipe

Ingredients
    1 1/2 c. cracker crumbs
    1/2 c. grated Romano cheese
    1/4 c. minced parsley
    1/2 tsp. salt
    1/4 tsp. black pepper
    1 1/2 lb. veal cutlets (1/8 inch thick)
    3 large eggs, slightly beaten
    3 Tbsp. olive oil
    1 garlic clove, mashed (optional)
Preparation
    Combine
    cracker
    crumbs with cheese, parsley, salt and pepper.
    Dip veal cutlets first in eggs, then in cracker crumb mixture,
    coating
    well.
    Heat
    oil
    in
    a
    large skillet; add cutlets and fry until golden.
    Add more oil if necessary.
