Potato Candy - cooking recipe

1 medium Russet potato
powdered sugar
peanut butter
Preparation

Peel potato and boil until very soft.
Drain water and mash potato.
Next, begin to add powdered sugar to potato until it feels like dough.
Roll out with rolling pin like a pie shell. Spread a thin layer of peanut butter over the dough.
Begin to roll the dough up.
Should come out to be the size of a half dollar.
Wrap in wax paper, then in foil and place in freezer until ready to use.
