Caprese Salad - cooking recipe
Ingredients

2 pt. cherry tomatoes, halved
4 oz. part-skim Mozzarella cheese, cut into 1/4-inch cubes
1/3 c. slivered green olives
1/3 c. chopped fresh basil
2 Tbsp. balsamic vinegar
1 Tbsp. olive oil
1/2 tsp. salt
Preparation
-
In medium bowl, combine all of the ingredients.
Toss and serve.
Will serve 4. High in vitamins A and C. One of the best sources of lycopene.
