Smothered Cabbage With Sausage - cooking recipe

Ingredients
    2 qt. Louisiana brown poultry stock or canned chicken broth
    2 tsp. salt
    2 tsp. freshly ground black pepper
    1 medium head cabbage
    1 (1 lb.) ham steak, trimmed
    8 links chorizo or other hot sausage
    1/3 c. bacon drippings or lard
    1 large onion, halved lengthwise, sliced
    1/2 tsp. red cayenne pepper
    1/2 tsp. freshly ground black pepper
    salt to taste
Preparation
    Combine stock or broth, 2 teaspoons salt and 2 teaspoons pepper in a heavy 6-quart saucepan; bring to a boil.
