Low-Fat Bran Muffins - cooking recipe
Ingredients

5 Tbsp. brown sugar
2 Tbsp. canola oil
3 Tbsp. unsweetened applesauce
1/3 c. molasses
1 egg or 2 egg whites
2/3 c. whole bran (any variety)
1/2 c. whole wheat flour
3/4 c. unbleached flour
1 tsp. baking powder
3/4 tsp. ground ginger
1/2 tsp. each: salt, cinnamon and baking soda
2/3 c. boiling water
vegetable cooking spray
Preparation

Line standard muffin tins with paper cups and spray lined tins with vegetable cooking spray.
Preheat oven to 350\u00b0.
Beat together first 5 ingredients.
Stir in bran and let stand 5 minutes.
Toss together remaining dry ingredients.
Combine with sugar-egg mixture.
Add boiling water and blend until smooth.
Bake in 350\u00b0 oven for 15 to 20 minutes.
Makes 12 muffins.
