Ingredients

2 c. rice
1 tsp. salt
4 c. water
4 eggs
1/4 lb. butter
1/2 c. Pet milk
1 Tbsp. vanilla
1 1/2 c. sugar
yellow food coloring
Preparation

Cook rice in water and salt until done, about 25 minutes. Add additional water, if necessary to avoid rice getting too thick and dry.
Add butter to rice.
Beat eggs and sugar and fold into rice.
Add milk, flavoring and a drop or two of food coloring, if desired.
Cook over low heat, stirring until almost boiling.
Add additional milk if necessary.
Could use lemon flavoring instead of vanilla.
