Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant
    1 c. bread crumbs
    1/2 c. milk
    3 eggs, beaten
    1/2 tsp. salt
    1 stick margarine
    1 c. cheese, grated
    1 small onion, chopped fine
Preparation
    Peel eggplant; boil until tender.
    Soak bread crumbs in milk. Melt margarine and saute onion and eggplant.
    Cut in cheese while mixture is hot.
    Add rest of ingredients, mixing well.
    Pour into buttered casserole.
    Bake 20 minutes at 400\u00b0.
    Add additional grated cheese over top.
    Bake 15 minutes.
