Sweet Potato Casserole - cooking recipe
Ingredients

5 lb. peeled sweet potatoes
3 c. miniature marshmallows
1 c. white corn syrup
1/2 c. liquid from boiled sweet potatoes or water
3 Tbsp. cornstarch
1 tsp. cinnamon
5 medium cooking apples, peeled and sliced
1 tsp. salt
Preparation

Peel sweet potatoes and cut into chunks.
Add about 2 cups of water to a large saucepan with lid and parboil the potatoes until almost done.
Reserve 1/2 cup of the liquid and cool.
Layer half the sweet potatoes in a large deep casserole.
Then add half the apples, spreading evenly.
Layer 1 1/2 cups of small marshmallows over apple.
Repeat again with layer of sweet potatoes and apples. (Add rest of the marshmallows on top towards the last 15 minutes of baking time and leave cover off.)
