Fresh Peach Cobbler - cooking recipe
Ingredients

3 c. sliced fresh peaches (about 4 large)
1 c. plus 3 Tbsp. sugar
1 Tbsp. lemon juice
1 1/2 c. flour
3 tsp. baking powder
1/2 tsp. salt
1/3 c. shortening
1/2 c. milk
1 egg, beaten
Preparation

Arrange peaches in an 8 x 8 x 2-inch baking pan.
Sprinkle with 1 cup sugar and the lemon juice.
Heat in a low 250\u00b0 oven while preparing shortcake.
Combine flour, baking powder, 1 tablespoon of the remaining sugar and the salt.
Cut in shortening until mixture is like coarse crumbs.
Add milk and egg at once, stirring until flour is just moistened.
Spread dough over hot peaches and sprinkle with remaining 2 tablespoons of sugar.
Bake in a 400\u00b0 oven for 35 to 40 minutes, until golden.
Makes 8 servings.
