Irish Soda Bread - cooking recipe

4 1/2 c. plain flour
1 Tbsp. baking powder
1 tsp. soda
2 eggs
3 Tbsp. sugar
1 tsp. salt
6 Tbsp. margarine
1 1/2 c. buttermilk
Preparation

In cup and with fork, beat eggs slightly; reserve 1 tablespoon.
Stir milk and remaining egg into flour mixture just until flour is moistened.
Turn dough out onto well-floured surface.
With floured hands, knead about 10 strokes to mix thoroughly.
Shape into ball; place in casserole.
In center of ball with sharp knife, cut a 4-inch cross 1/4-inch deep.
Brush with reserved egg.
Bake 1 hour and 10 minutes.
Cool in casserole on wire rack 10 minutes.
