Eggs Poached In White Wine - cooking recipe

Ingredients
    1 Tbsp. butter
    1/2 c. white wine
    4 eggs
    1/8 tsp. each: salt and pepper
    2 Tbsp. crumbled Blue cheese
    hot buttered toast
Preparation
    Melt butter in frying pan.
    Add wine; slip in eggs, salt and pepper.
    Poach until whites are nearly firm.
    Sprinkle crumbled Blue cheese over eggs.
    Heat until melted.
    Serve on hot buttered toast.
    Makes 2 servings.
