Falafel(Fried Bean Cakes) - cooking recipe
Ingredients

4 c. dried chickpeas
2 large onions, finely chopped
1 head garlic, finely chopped
2 bunches parsley, finely chopped
2 tsp. cumin
salt to taste
1 tsp. baking powder
1/4 tsp. baking soda
Preparation

Soak chickpeas overnight.
Drain.
Combine peas, onions, garlic, parsley.
Grind with meat grinder or beat until almost creamy.
Add salt, cumin and baking powder.
Mix thoroughly.
When ready to fry, mix in baking soda.
Shape into small patties.
Fry in deep hot oil (electric wok works well) until light brown and crisp.
Serve hot with fresh tomato slices and lettuce leaves and sliced onions in pita bread.
