Light Bright Shrimp Salad - cooking recipe

Ingredients
    2/3 c. cooked shrimp
    1/4 c. diced green pepper
    2 Tbsp. safflower or peanut oil
    3/4 tsp. salt
    lettuce leaves
    1/2 c. sliced celery
    1/4 c. chopped green onion
    2 Tbsp. lemon juice
    1/4 tsp. pepper
    8 slices pineapple
Preparation
    Combine shrimp, celery, green pepper and onion.
    Pour in oil and toss until all ingredients are lightly coated.
    Add lemon juice, salt and pepper.
    Continue tossing until well mixed. Arrange 2 slices of pineapple on each of 4 lettuce lined salad plates.
    Spoon shrimp mixture over pineapple.
    Makes 4 servings of 250 calories each.
